NORTH CAROLINA YAM CASSEROLE
DELIGHT
 
3 c. cooked, mashed sweet potatoes (about 2 lg. cans)
1 c. sugar
2 eggs
1/2 c. milk
1/4 c. (1/2 stick) butter, melted
1 tsp. vanilla
1/2 tsp. salt

Mix all the above ingredients together until well blended. Pour into a buttered baking dish approximately 10 inches square and 2 to 3 inches deep. Sprinkle with topping and bake at 350 degrees for 30 minutes.

TOPPING:

1/2 stick butter, melted
1 c. brown sugar
1/2 c. self-rising flour
1 c. chopped pecans

Stir brown sugar into melted butter. Add flour. Add nuts. Mix until crumbly. Sprinkle on the potatoes.
