MICROWAVED FILLET OF SOLE IN
LEMON BUTTER
 
1/2 c. butter
2 tbsp. all-purpose flour
2 tbsp. fresh lemon juice
1 tbsp. parsley
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. celery seed
1 lb. sole, orange roughy, or flounder fillets, fresh/frozen, thawed

Place butter in baking dish. Microwave on high until melted, about 1 minute. Blend in remaining ingredients except fish. Coat both sides of fillets with butter sauce.

Arrange in a baking dish. Cover with waxed paper or plastic wrap. Microwave on high until fish flakes easily in center with a fork, 5-6 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
