MICROWAVE FILLET OF SOLE IN
LEMON PARSLEY BUTTER
 
1/2 c. butter
2 tbsp. all-purpose flour
2 tbsp. fresh lemon juice
1 tbsp. parsley
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. celery seed
1 lb. sole, fresh or frozen, thawed

Place butter in baking dish, 12 x 8 inch or 10 inch square casserole. Microwave at High (100%) until melted, 45 seconds to 1 minute 30 seconds. Blend in remaining ingredients except fillets. Coat both sides of fish fillets with butter sauce. Arrange in the baking dish. Cover with waxed paper. Microwave at High (100%) until fish flakes easily 5 to 6 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
