SALMON BALLS 
1 (15 oz.) can salmon or jack mackerel
1 onion, chopped
Accent seasoning (MSG; optional)
1 cup cooked mashed potatoes (butter added)
yellow corn meal, for sprinkling
2 to 3 eggs, beaten
salt and pepper, to taste

Combine fish, onion, Accent (if using), salt, pepper and mashed potatoes. Sprinkle in a little cornmeal. Make balls in hand, roll in egg, then cornmeal.

Add grease to iron skillet, about 3/4 full. Fry until nicely browned and done.
