PASSOVER APPLE MATZO KUGEL 
3 matzos
6 eggs
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. cinnamon
1/2 c. raisins
1/2 c. chopped nuts
4 apples, shredded
1/3 c. orange juice
Cinnamon and sugar
1/4 c. parve butter

Break matzo in pieces. Soak in warm water until soft. Drain. Beat eggs, add sugar, salt, cinnamon. Stir in the matzos. Add raisins, nuts and apples. Pour into greased 9 x 12 pan. Pour orange juice over top.

Sprinkle with cinnamon and sugar mixture. Drizzle with butter. Bake at 350 degrees for 45 minutes or until browned. Let sit for a few minutes before cutting. Serves 6 to 8.

Our family looks forward to passover, largely because of this dish!! A friend made it years ago and I made several large ones each year for passover. We have it for breakfast, and snacks all week! :)
