STUFFED FLANK STEAK (EA) 
2 lb. flank steak (skirt steak)
2 tbsp. drippings
1/2 c. hot water
1 tsp. salt
1/8 tsp. pepper
1 c. cooked rice
2 tbsp. onion, sauteed
3 tbsp. green pepper, sauteed
1/2 c. chopped celery
Salt, pepper & poultry seasoning, to taste

Spread dressing, or filling, on steak, roll up and tie firmly. Brown slowly in hot drippings. Add water and seasoning; cover tightly. Bake in a moderate oven at 325 degrees, for about 2 hours or until tender.
