BRAISED PORK 
2 lb. boned pork
4 slices bacon
1 onion
2 cloves garlic
1 tsp. thyme
2 tbsp. flour
3 tomatoes
2 tbsp. tomato paste
2 c. white wine
Salt & pepper

Chop the bacon and fry until cooked but not crisp. Place in casserole, cut the pork into 1 inch cubes and brown in bacon fat on all sides. Chop the onion and garlic and saute. Put the meat onion and garlic into the casserole and sprinkle with the flour mixing well.

Pour the wine into the same pan along with the onions and bring to a boil. Pour into the casserole. Peel and chop the tomatoes and add with the tomato paste, thyme, salt and pepper. Cook in an oven preheated to 350 degrees for 1 1/2 hours.
