PORK LOIN BRAISED IN MILK 
2 tbsp. butter
2 tbsp. olive oil
3-3 1/2 lb. pork roast
Salt
Pepper
2 1/2 c. milk
1/2 c. whipping cream
2 cloves garlic
Bay leaf
2 tbsp. Parmesan cheese

Melt butter and oil in large casserole. Add garlic and bay leaf. When butter foams, add pork. Brown pork on all sides over medium heat. Season with salt and pepper. Stir in milk and bring to a boil. Partially cover casserole and reduce heat.

Cook meat 2-2 1/2 hours or until tender. Baste meat several times during cooking. If sauce remains cook uncovered over high 10-15 minutes longer - remove fat. Add cream and Parmesan cheese to sauce. Return sauce to casserole, simmer 1-2 minutes until thick - slice meat, spoon sauce over and serve.
