LOW-FAT ZUCCHINI BREAD 
1 (8 oz.) carton egg product, equivalent to 4 eggs
1/2 c. melted touch of butter spread
1 tbsp. vanilla
2 c. sugar
3 c. plain flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. grated zucchini, with skin

Options:
3/4 c. chopped nuts
1/2 c. raisins
Sm. can crushed pineapple

Beat eggs, oil, and vanilla. Add rest of ingredients and mix well. Pour into 2 greased loaf pans. Bake 60 minutes at 350 degrees. Makes 2 loaves. Bake at 325 degrees with dark pans.
