LOW FAT COOKIES 
3 ripe bananas, crushed
1/2 c. dried dates, chopped
1/2 c. dried apricots, chopped
2 c. quick oats
1/2 c. walnuts, chopped
1/3 c. canola oil
1/2 tsp. salt
1 tsp. vanilla

Preheat oven to 350°F.

Mix all ingredients together. Let stand to absorb moisture (5 to 10 minutes).

Bake in preheated oven for 25 minutes.
