GRITS CASSEROLE 
1 tsp. salt
3 c. boiling water
1 c. Quick grits
2 tbsp. butter
1 c. light cream
2 well beaten eggs
1/2 lb. (1 1/2 c.) diced cheddar cheese
Grated Parmesan cheese

Add salt to boiling water. Slowly stir in grits. Cook in double boiler 30 minutes. Stir in butter. Mix cream and eggs; stir into grits. Mix in diced cheese. Pour into 2 quart casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees for 1 1/2 hours. Makes 8 servings.
