BROCCOLI CASSEROLE 
2/3 c. water
2/3 c. minute rice
1 med. onion
1/2 c. butter
Ritz crackers (1 roll crushed)
1/2 c. butter, melted
1 c. cream of chicken soup
1/2 soup can milk
1/2 lb. Velveeta cheese
2 pkgs. chopped broccoli

Cook rice in 2/3 cup water (follow package directions). Set rice aside. Brown onion in butter. Blend soup, milk and cheese until cheese melts. Cook broccoli in salted water until tender. Drain broccoli and onion. Blend rice, onion and soup and cheese mixture. Pour mixture into greased casserole with crumbs. Bake at 325 degrees for 40 to 50 minutes.
