BROCCOLI CASSEROLE 
3 (10 oz.) pkg. frozen broccoli or 1 bunch fresh
1/2 c. Minute Rice, uncooked
1 c. milk
1 can cream of chicken soup
1 c. Velveeta cheese, cut up
1 lg. onion, diced
1/2 c. butter
30 Ritz crackers

Saute onions in 1/4 cup butter and put aside. In large mixing bowl add chicken, soup, rice, milk, cheese and add onions. Cook broccoli as directed and add to above mixture.

Crunch crackers and add remaining melted butter. Mix and line greased 9 x 13 pan and pour mixture into cracker lined pan.

Bake at 350 degrees for 1/2 hour or until bubbly.

Ham, chicken, or pork can be added to make a one dish casserole meal.
