ITALIAN BAKED BEANS | |
2 c. lima beans (dry) 8 c. water for soaking 1/2 tsp. salt 1/4 c. olive oil 1 c. chopped onion 2 cloves garlic, minced 1 c. coarsely cut celery 3 tbsp. parsley 1/2 tsp. thyme 1/2 tsp. basil 1/4 tsp. pepper 1 c. solid pack tomatoes 2/3 c. bean liquid Grated Parmesan Wash beans and soak overnight in 8 cups water. Use same water with 1 tablespoon butter and bring to boiling point. Cover and cook 1 hour. Stir and add 2 teaspoons salt; simmer 30 minutes until tender. Drain and save liquid. Cook onion, garlic and celery in oil - low heat until tender. Add parsley and herbs, coarsely cut tomatoes and bean liquid. Heat all to boiling point. Mix into beans, cover and bake 50 minutes at 350 degrees. Remove, dust with Parmesan cheese. Return uncovered for 10 minutes. |
