CREAM OF COCONUT CAKE 
1 white cake mix
1 egg yolk
1/2 can cream of coconut
Cool Whip (8 oz.)
1 c. coconut

Bake a white cake mix according to package directions; adding 1 egg yolk. When removed from oven, poke pencil sized holes in cake. Pour cream of coconut on cake. COOL. Frost with Cool Whip. Sprinkle coconut over top. Refrigerate. Best when made a day ahead of using.
