OVEN FRIED CHICKEN WITH HONEY
BUTTER SAUCE
 
Oven Fried Chicken:

1 cup all-purpose flour
2 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
1 (2 1/2-3 lb) broiler-fryer, cut up and skinned
1/2 cup (1 stick) melted butter
Honey-Butter Sauce (see below)

Combine flour, paprika, salt and pepper, stirring well; dredge chicken in flour mixture. Set aside. Pour butter into 13x9x2-inch baking pan. Place chicken in pan, turning to coat with butter. Cover and bake, meaty side down at 400°F for 30 minutes. Turn chicken pieces, and pour Honey-Butter Sauce over each piece.

Bake uncovered an additional 25 to 30 minutes or until tender, basting occasionally with sauce.

Honey-Butter Sauce:

1/4 cup (1/2 stick) butter, melted
1/2 cup honey
1/4 cup lemon juice

Combine all ingredients; beat well.
