KENNY'S STUFFED PUMPKIN 
1 lb. hamburger
1 c. rice
1 lg. onion
1 lg. green or red pepper
1 lg. clove garlic
1 sm. pumpkin, approximately 12 inch diameter
1 can cream of mushroom soup or any condensed cream soup, undiluted; optional (cheddar cheese soup is a favorite)

Preheat oven to 350 degrees. Cut cap in top of pumpkin. Clean out all seeds and veins. Butter inside of pumpkin well. Set aside. Cook rice 10 minutes after it boils. Brown hamburger, onions, green pepper, and garlic until hamburger is about half done. Drain well.

Mix all ingredients together in large bowl. Salt and pepper to taste. Fill shell but don't pack down. Put on cap and put shell in baking dish. Bake 3 hours. When done, slice pumpkin about 2 inches wide from top to bottom. Trim off skin. Butter pumpkin meat; top with some of the filling and enjoy! The filling can easily be changed to suit your own family.
