BAKED STUFFED PUMPKIN 
1 sm. pumpkin
1 lb. lean hamburger
1 lg. onion
1 c. cooked rice or 2 lg. potatoes boiled & mashed
Salt & pepper to taste

Prepare pumpkin. Carve out cap (as you would for a Jack `o Lantern. Remove seeds, leave pulp intact.

Prepare stuffing: Saute onion in frying pan, add hamburger; brown and drain. Add rice or mashed potatoes. Stuff pumpkin and replace cap. Bake in 375 degree oven until pumpkin is tender.
