“MIXED FRUIT SALAD” IS IN:
NEXT RECIPE:  ORANGE CARROT SALAD

MIXED FRUIT SALAD 
1 (20 oz.) can sliced peaches
1 (20 oz.) can sliced pineapple, cut in pieces
1 (16 oz.) can mandarin oranges
1 (3 1/2 oz.) pkg. vanilla pudding
1 (3 1/2 oz.) pkg. vanilla tapioca pudding (do not use instant puddings)

Drain all fruits. Combine all juices and add enough water to make 3 cups.

Stir in the pudding mix; combine well.

Cook in microwave on full power for 6 to 7 minutes or until mixture has thickened. Stir 2 to 3 times while the mixture is cooking. Cool.

Mix in drained fruit. Cover tightly and refrigerate.

May be stored for up to 5 days.

Variations: Peaches, pineapple, fruit cocktail, and apricots may be used, but any fruit will do: strawberries in season and grapes at Christmas time, etc. Avoid using bananas or blueberries to prevent salad from becoming discolored.

4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
