MARINATED VEGETABLE SALAD | |
1 bunch fresh broccoli 1 head fresh cauliflower 1 lg. onion 1 lg. green pepper 1 lb. Monterey Jack cheese 1 lb. pepperoni 1 jar green olives, drained 1 can black olives, drained 8 oz. bottle Zesty Italian dressing Cut up broccoli and cauliflower into bite size pieces. Chop onion and green pepper. Cut cheese in small squares (approximately 1/4 inch). Cut pepperoni (quartered and sliced). Slice olives or leave whole. Mix all in a large bowl and marinate. Let set for a few hours to soften the vegetables (cucumbers, tomatoes and mushrooms will turn brown if added.) I make the night before and refrigerate. |
