COLD RICE SALAD 
1 c. raw rice
1/4 c. salad oil
1 tbsp. wine vinegar
Salt and pepper to taste
6 sliced water chestnuts
1/4 c. minced parsley
1/4 c. minced green onions
Lettuce
Black olives
Mayonnaise

Cook rice. Add oil, vinegar, salt and pepper; cool. Add chestnuts, parsley, onion and mix. Add more oil and vinegar to taste. Arrange on lettuce. Garnish with olives. Serve with mayonnaise.
