OAT BRAN MUFFINS 
1 1/2 c. flour (can use whole wheat)
1 1/2 c. oat bran
1 c. rolled oats
2/3 c. brown sugar, or white or honey
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt

1 c. buttermilk 3/4 c. corn oil 3 eggs lightly beaten 2 tsp. vanilla, tsp. nutmeg, opt. 1/2 c. raisins or currants 1/2 c. chopped dried apricots 3/4 c. walnuts, opt. 2 tsp. poppy seeds, opt.

Optional spices: cumin, cardomon, nutmeg

Mix dry ingredients. Add remaining wet ingredients mixed together. Into well in dry mixture. Stir just to combine.

Mix in fruits, nuts and seeds and spoon into muffin cups. Bake for 12 to 20 minutes. Yields 20 muffins.
