ALL BRAN OAT BRAN MUFFINS -
LIGHT
 
1 1/4 c. oat bran
1/2 c. firmly packed brown sugar
1 tbsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 tsp. salt
1 1/2 c. skim milk
1/4 c. egg substitute or 1 egg
2 tbsp. vegetable oil
1 tsp. vanilla extract
1/2 c. raisins
Vegetable cooking spray
1 1/2 c. shreds of wheat bran cereal

Combine first 5 ingredients in a large bowl; make a well in center of mixture and set aside. Combine wheat bran cereal and milk and let stand 2 minutes; stir in egg substitute and next 3 ingredients. Add to dry ingredients, stirring just until moistened. Spoon batter into muffin pans coated with cooking spray filling two-thirds full. Bake at 375 degrees for 22 minutes. Remove from pans. Yield: 1 1/2 dozen.
