OAT BRAN MUFFINS 
2 1/2 c. oat bran cereal
2 tsp. brown sugar substitute
1/2 c. raisins
1 tbsp. baking powder
1 c. skim milk
4 oz. egg substitute (or 2 eggs)
1 tbsp. oil
2 tbsp. applesauce

Preheat oven to 425 degrees. Line 10 muffin tins with paper baking cups. Combine dry ingredients. Add milk, egg or egg substitute, oil and applesauce. Mix just until moist. Fill muffin cups 3/4 full. Bake for 17 minutes.
