OAT BRAN MUFFINS 
2 c. oat bran
1/4 c. sugar or brown sugar, packed
2 tsp. baking powder
1 c. skim milk
1/4 c. egg substitute or 2 egg whites, slightly beaten
1/4 c. honey
2 tbsp. corn oil
1 tbsp. vanilla

Preheat oven to 425 degrees. Line muffin cups with paper or spray with vegetable oil cooking spray. Mix together all dry ingredients. Add skim milk, egg substitute, honey, oil, and vanilla. Mix just enough to moisten. Divide mixture into tins so cups are nearly full. Bake for 12-15 minutes or until lightly browned.
