“PUMPKIN BREAD” IS IN:

PUMPKIN BREAD 
4 cups flour
3 cups sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. baking powder
1 tsp. vanilla or 1 tbsp. dark rum
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. ginger
1 (16 oz) can pumpkin
1 cup vegetable oil
4 eggs
2/3 cup water

Preheat oven to 350°F.

Grease and lightly dust with flour two 9x5x8-inch loaf pans.

In a medium bowl, whisk dry ingredients together well.

In a separate bowl, stir together pumpkin, oil, eggs and water, stirring just enough to moisten. Do not overmix.

Pour half of the batter into each pan and bake in preheated 350F oven for 60-90 minutes, or until a toothpick inserted in center comes out clean.

Remove from oven. Remove cake from pan after 10 minutes and cool on wire rack.

Makes 2 loaves.
