OAT BRAN MUFFINS 
1 1/2 c. oat bran (hot cereal), uncooked
1/2 c. whole wheat flour
1/2 tsp. salt (optional)
2 tbsp. brown sugar
2 tsp. baking powder
1 tsp. cinnamon

Put in large bowl; set aside.

1/4 c. skim milk
2 tbsp. honey
1 egg (or 2 egg whites)
1/2 c. apple juice
2 tbsp. oil

Combine this with dry ingredients and add 1 cup diced apples (peeled and cored), 2 tablespoons raisins; mix until moistened. Batter will be lumpy. Fill muffin tins which have been sprayed or greased (2/3 full). Bake at 400 degrees for 18 to 20 minutes or until muffins are light brown. Makes 12 muffins.
