PINEAPPLE OAT BRAN MUFFINS | |
1/8 c. safflower butter, unsalted 4 egg whites or egg substitute 20 oz. can unsweetened crushed pineapple with juice 1 tsp. lemon juice 1/4 c. oat flour 1/2 c. oatmeal 1/2 c. bran 1/2 c. raisins 1 tsp. allspice 1 c. whole wheat flour 1 tsp. baking soda 2 tsp. baking powder 2 tsp. vitamin C (optional) 1/4 c. water Beat together softened butter, water, egg whites, pineapple and raisins plus lemon juice. Add flour, oatmeal, bran, baking soda, and powder; spoon batter into muffin tins sprayed with Pam. Bake about 20 minutes at 350 degrees. |
