INDIVIDUAL CHERRY CHEESECAKE 
16 oz. cream cheese
3/4 c. white sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
24 vanilla wafers
1 (21 oz.) can cherry or blueberry pie filling

Beat cream cheese and sugar until smooth. Add eggs, lemon juice, and vanilla. Beat until light and fluffy and set aside. Place 1 vanilla wafer in cupcake paper (prefer foil papers). Fill cups 2/3 full with cheese mixture. Bake at 350 degrees for 15 to 20 minutes until set. When cool, top with 1 tablespoon pie filling. Chill.
