CARROT NUT MUFFINS | |
1 c. white sugar 3/4 c. oil 2 eggs 1 tsp. baking soda dissolved in 1 tbsp. warm water 1/2 tsp. salt 1 tsp. baking powder 1 tsp. vanilla 1 1/2 c. flour 1 c. walnuts 1 c. grated carrots Beat sugar, oil and eggs. Add baking soda and water and vanilla; mix well. Add flour, salt and baking powder; mix until moistened. Stir in grated carrots and nuts. Bake at 375 degrees for 15-20 minutes. Yields 9-10 large muffins. |
