PORK CHOPS FOR TWO 
2 (3/4 inch) thick loin chops
1 tbsp. vegetable oil
2 tbsp. chopped onion
1/3 c. rice (uncooked)
1 chicken bouillon cube
1 c. hot water
1/2 c. chopped apple
1 tbsp. melted butter
1 tbsp. brown sugar
1/4 tsp. cinnamon
1 sm. apple, sliced

Brown chops in hot oil, drain, reserve drippings in skillet. Add onion and rice, saute until rice is golden brown. Dissolve bouillon in hot water. Pour into rice-onion mix; bring to boil. Stir in chopped apple. Pour into 10x6x2 glass baking dish. Arrange pork chops on top. Cover and bake at 325 degrees 25-30 minutes.

Combine butter, brown sugar and cinnamon; brush apple slices with mixture. Arrange slices around chops. Return to oven, bake uncovered 20 minutes (or more) until rice and apples are tender and pork chops done.
