CHOP SUEY WITH ALMONDS 
1 lb. lean pork cut in thin strips
1/4 c. fat
1 c. chopped onions
2 c. celery cut in thin 1 inch strips
1 (No. 2) can mixed Chinese vegetables
Liquid from mixed vegetables plus enough water to make 1 1/2 c. liquid
1/2 tsp. salt
Dash of pepper
2 tbsp. cornstarch
2 tbsp. cold water
2 tsp. soy sauce
2 pkgs. Minute Rice
1/4 c. toasted almonds

Sear pork strips in fat in skillet for 2 minutes. Add chopped onions and saute 5 minutes; stir often. Add celery cut in strips. Add liquid from vegetables plus water to meat mixture. Add salt and pepper; cover and boil 5 minutes. Add vegetables. Bring to a boil.

Blend cornstarch, water and soy sauce. Add to boiling water, lightly, cook 1 minute longer. Meanwhile, prepare Minute Rice as directed on package. Cover with chop suey mixture. Garnish with 1/4 cup toasted almonds. Serves 6.
