POP'S MEATLOAF | |
2 lbs. 80/20 ground beef 1 pkg. Lipton beefy onion soup mix 1 cup toasted breadcrumbs 1 tsp. salt 1 tsp. pepper 1 cup finely diced onion of choice 1/2 cup finely diced bell pepper of choice 1/4 cup shredded carrots 4 tbsp. (1/2 stick) butter 1 heaping tbsp. minced garlic 1 (15 oz.) can tomato sauce, divided 3 large eggs Put beef, garlic, 5 ounces of tomato sauce, whisked eggs and all dry ingredients in a large mixing, cover and set aside. Sauté veggies in butter until soft and add to mixing bowl when cool. Preheat oven to 350°F. Mix all ingredients well, then form a loaf in a 13x9-inch Pyrex baking dish. Bake uncovered 45 minutes then cover top with remaining tomato sauce and bake another 15 minutes. Remove from oven, cover and rest for 10 minutes. Slice and serve with your choice of sides. Our family favorites are green beans, black eyed peas, creamy buttery sliced new potatoes, whipped potatoes with homemade brown gravy and homemade mac and cheese. Submitted by: William Wynne |
