CARROT COOKIES 
1 c. shortening
3/4 c. sugar
1 egg
1 c. carrot pulp (cooked or raw)
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
3/4 c. chopped coconut

Mix together well. Drop from spoon onto a greased pan. Bake for 12 to 15 minutes in a 350 degree oven. Cool and frost.

FROSTING:

2 c. powdered sugar
1 orange rind (grated) and juice
1/2 tsp. butter
