CARROT COOKIES 
3/4 c. shortening
3/4 c. sugar
1 egg, beaten
1 c. cold cooked mashed carrots
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. lemon extract (optional)

Mix in order given. Drop by tablespoon on greased cookie sheet. Bake 10 to 12 minutes at 350 degrees.

FROSTING:

2 c. powdered sugar
2 tbsp. butter (melted)
Grated rind of 1 orange and enough juice to spread easily

Cookies must be cold before frosting.
