COUNTRY GARDEN POTATOES 
12 med. red potatoes
1/3 c. milk
1 red or green bell pepper, or a combination of both for color, diced
1 tbsp. minced fresh parsley
1/2 c. grated sharp Cheddar cheese
1/4 c. butter, melted
salt and pepper to taste

Boil potatoes in jackets until just tender, about 25 minutes. Leaving skins on, dice potatoes into bite sized chunks and place in shallow casserole. Moisten with milk.

Combine bell peppers, onion, parsley and cheese; mix well. Put mixture on top of potatoes. Drizzle melted butter over all and season, as desired, with salt and pepper.

Bake for 30 to 45 minutes at 400°F.
