8 DAY PICKLES | |
2 gal. cucumbers 1 box plain salt 1 sm. box alum 1 gal. white vinegar 1 sm. box pickling spice 8 lb. sugar Use plastic or stainless steel utensils for making pickles. Day 1: Soak cucumbers in 3/4 box salt and 1 gallon hot tap water. Day 2: Drain and rinse cucumbers. Boil 1 gallon water and alum; pour over cucumbers. Day 3: Drain and rinse cucumbers. Boil 1 gallon water and pour over cucumbers. Day 4: Drain and rinse cucumbers. Boil 1 gallon vinegar and spices and pour over cucumbers. Let soak until 8th day. Day 8: Drain and throw away vinegar. Slice cucumbers, layering with sugar, until all cucumbers and sugar is used. Stir until sugar melts. Pack into clean jars. Do not have to be sealed, they will keep. |
