ITALIAN SAUSAGE SOUP 
1 1/2 c. onions, coarsely chopped
1 1/2 c. celery
1 clove garlic, finely chopped
3 tbsp. olive oil
2 c. canned tomatoes, sliced + 1 can puree
5 c. chicken broth
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. thyme
1/2 c. parsley
2 bay leaves
1 c. broken pasta
Sugar, salt and pepper as desired
1 1/4 to 1 1/2 lbs. Italian sausage

Saute sausage in olive oil. Add celery, onions, garlic and saute. Add tomatoes, puree. Cook 10 minutes. Add broth, spices, etc. Simmer 30 minutes. Add broken pieces of pasta and cook 10 more minutes.

Serve with crusty, herbed bread and salad of grapefruit sections, orange sections and avocado slices on Bibb lettuce and tart dressing.
