APPLE BREAD 
3 eggs, slightly beaten
2 c. sugar
1 c. oil
1 tbsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
4 c. chopped apples
1 c. chopped pecans (optional)

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

1. Stir together by hand the eggs, sugar, oil and vanilla until well mixed.

2. Stir in flour, baking soda and cinnamon until evenly mixed.

3. Stir in apples and pecans.

4. Divide between 2 greased loaf pans.

5. For topping combine sugar and cinnamon in small cup. Sprinkle evenly over tops of loaves.

6. Bake in 325 degree oven for 1 hour and 10 minutes or until toothpick inserted in centers comes out clean.

7. Let breads cool in pans on wire racks for 10 minutes. Remove breads from pans to wire racks to cool.

8. Wrap tightly in plastic wrap or foil and store at room temperature.
