1 1/2 cups light brown sugar 1/2 cup white sugar 1/2 cup water 1/8 tsp. cream of tartar Pinch of salt 2 egg whites 1 tsp. vanilla Alternative Idea: 1 tsp. maple favoring 1 cup chopped nuts Cook brown sugar, white sugar, water, cream of tartar and salt to hard-ball stage (approximately 250). Beat egg whites until stiff and add vanilla. Add to hot syrup mixture and beat till it holds its shape and loses its gloss. Drop by teaspoonfuls onto waxed paper. Can also add maple flavoring and chopped walnuts. |
