SAUSAGE CHEESE BALLS 
1/2 lb. hot pork sausage
1 1/2 c. biscuit mix
1/2 sharp cheese, grated
1 can water chestnuts, sliced

Cook sausage in hot skillet. Remove from heat and place on paper towels to drain.

Combine cheese and biscuit mix in a bowl; stir in sausage. Shape heaping teaspoons of mixture into small balls enclosing one sliver of water chestnut in each one. Bake in a 450 degree oven for 10 minutes or until brown. Can be frozen before baking and baked when ready to serve. Makes 75 balls or more.
