THE EGGPLANT RECIPE | |
2 med. eggplants 1 med. minced clams, juice and all 1 clam can of milk 1 tsp. Worcestershire sauce 2 stalks Ritz crackers, coarsely crushed Peel the eggplant and cut in small cubes. Place in pan with enough water to cover. Cook until tender, about 10 minutes. Add the remaining ingredients and mix. Put in a buttered casserole dish, dot with butter, and bake at 400 degrees for 45 minutes. |
