VEGETABLE SOUP 
2 lbs. stew beef and bone
1 tsp. salt
1 head cabbage, sm.
6 carrots, diced
3/4 c. celery, diced
1/4 c. green peppers, diced
1 lb. can tomatoes
1 lb. pkg. frozen mixed vegetables
1/4 c. rice or barley
1/2 tsp. pepper
3 or 4 potatoes, diced
2 tsp. parsley
1 sm. can tomato paste
1 tsp. sugar
2/3 c. dried beans
1/2 c. macaroni

Place beef and bone, salt and 4 quarts of water in a large pot. Cover. Boil. Skim surface. Add dried beans.

Add cabbage, onions, carrots, celery, green peppers, tomato and paste. Boil, simmer, covered, 30 minutes.

Add remaining ingredients EXCEPT frozen vegetables, rice, macaroni. Simmer covered 3 hours.

Add frozen vegetables, rice and macaroni. Simmer 30 minutes. Remove bone. Cut meat. Makes 6 1/2 quarts.
