BROWN RICE PIZZA (VEGETARIAN) 
CRUST:

3 c. cooked brown rice
1 c. grated Mozzarella cheese
1/2 c. sesame seeds
2 eggs, beaten

Allow rice to cool, then combine with remaining crust ingredients. Pat into a greased 12 inch pizza pan and bake at 400 degrees for 20 minutes.

SAUCE:

3 tbsp. butter
3 tbsp. whole wheat flour
1 1/2 c. milk
1/2 tsp. paprika

To make the sauce, melt butter, add flour and stir over medium heat for 1 minute. Whisk in milk and paprika, then continue stirring over medium heat until sauce thickens. Spread sauce over baked crust.

TOPPING:

1 c. broccoli, steamed
1 c. mushrooms, sliced and sauteed
1 c. zucchini, sauteed
1/2 lb. Muenster cheese, sliced
2 tomatoes, sliced
1/2 tsp. oregano

Prepare topping vegetables as indicated. Arrange, along with Muenster cheese and oregano, on top of pizza. Broil for 5 minutes until cheese melts. Serves 4 to 6.
