BAKED CHICKEN CASSEROLE 
2 c. celery, chopped
2 tbsp. butter
3/4 c. mayonnaise
4 hard boiled eggs, chopped fine
2 tbsp. lemon juice
2/3 c. Cheddar cheese, grated
1 sm. onion, chopped
4 c. cooked chicken, diced
1 can cream of chicken soup
1 tsp. salt
1 c. potato chips, crushed
1/3 c. slivered almonds, chopped

Saute celery and onion in butter until soft (about 3 minutes). Mix with chicken, mayonnaise, soup, eggs, salt and lemon juice. Put in 13 x 9 inch baking pan. Combine potato chips, cheese and almonds; sprinkle on top. Bake in 400 degree oven for 25 to 30 minutes. Serves 10 to 12.

I had some leftover chicken from a store bought rotisserie chicken, perfect for this dish! Made it exactly as written except I didn't have potato chips so I subbed crushed Ritz butter crackers. My family really raved about this casserole! Thanks for sharing.
