BAKED CHICKEN CASSEROLE 
2 tbsp. chopped green pepper
1/2 c. sliced mushrooms
2 c. chicken broth
2 c. chopped cooked chicken
2 c. crushed potato chips
1 tbsp. minced onion
4 tbsp. butter
4 tbsp. flour
1/2 c. grated cheese

Saute pepper, onion and mushroom in butter until onion is limp but not brown. Stir in flour, add broth and cook until thickened. Add chicken and grated cheese. Sprinkle 1 cup potato chips in 10 x 12 inch casserole dish. Pour chicken mixture over top with remaining chips. Bake 30 minutes at 350 degrees. Makes 10 to 12 servings.
