HOMEMADE WHITE BREAD
9 c. unbleached flour
1/4 c. sugar
2 pkg. dry yeast
3 tbsp. Crisco shortening
1 tbsp. salt
3/4 c. warm water
2 2/3 c. warm water

Place 2 packages of yeast in a small bowl; add 3/4 cup warm water to dissolve. Add sugar to yeast mixture. Place 3 tablespoons Crisco in a larger bowl; add salt and 2 2/3 cups very warm water, until shortening has melted. Add half of flour (4 1/2 cups) to shortening mixture and knead in bowl until blended well. Add yeast mixture and blend well again.

Using dough hooks or hands, add remainder of flour and knead for 5 minutes. Place in greased bowl to rise 1 1/2 hours. Grease 2 loaf pans and set aside. Punch dough down and knead again for 5 minutes. Divide dough in half and place each half in a loaf pan. Allow to rise again 45 minutes. Then bake at 400 degrees for 30 minutes. Butter top of loaf and bake for 1 minute longer. Remove from pans and cool.
