CHEWY PEANUT BUTTER CHOCOLATE
COOKIES
 
1 1/4 c. peanut butter
2 c. sugar
3 eggs
2 tsp. vanilla
2 c. all-purpose flour
3/4 c. cocoa or 1 c. chocolate chips (melted)
1/2 tsp. salt
1 tsp. baking soda

Note: For best texture, use organic peanut butter prepared using oil instead of shortening (ingredients list on jar will list "hydrogenated shortening" if peanut butter is NOT prepared using oil). If organic peanut butter is not available, additional liquid may need to be added to obtain proper consistency for cookies; add a few tablespoons of milk, applesauce, or an extra egg.

Cream peanut butter and sugar in large mixing bowl. Add eggs and vanilla; blend well. Combine flour and cocoa, baking soda and salt. Gradually blend into creamed mixture. Drop by teaspoonfuls onto ungreased cookie sheet.

Bake at 350°F for 8-9 minutes. Do not overbake, cookies will be soft. They will puff during baking, flatten upon cooling. Cool on cookie sheet until set (about 1 minute).

Cool completely on wire rack.

Makes about 4 1/2 dozen.

This recipe was wonderful. The only thing it needed was more moisture. The dough was crumbly when I finished mixing and I happened to have some "no sugar added" applesauce in the fridge. I added just enough to get the right texture and the cookies turned out fabulous.

I loved these cookies. the dough was crumbly but I continued the recipe exactly and they came out awesome! I put peanut butter frosting and chocolate Jimmys on mine. it was as if it was meant to be :-D
