“PEAR CRUMB COFFEE CAKE” IS IN:

PEAR CRUMB COFFEE CAKE 
CAKE:

1-1/4 cups flour
1/2 cup sugar
2 1/4 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 cup 1% milk
4 tbsp unsalted butter, melted
1 egg, beaten
2 ripe pears, cored, cut into 1/2-inch pieces

STREUSEL:

1/2 cup sugar
1/4 cup flour
1 tsp. cinnamon
3 tbsp. unsalted butter, melted

Preheat oven to 400°F. Spray an 8-inch square baking dish with cooking spray.

For Cake:

Combine first 5 ingredients in medium bowl.

In a separate bowl, mix milk, butter, and egg. Pour into flour mix. Stir in pears, transfer to pan.

Streusel:

In bowl, mix sugar, flour, and cinnamon. Stir in butter to form crumbs. Sprinkle mix over batter. Bake for 30-35 min or until golden and dry on top. Cool completely in pan.

Yum! Great way to use those ripe pears. I froze my pears beforehand (much like when baking banana bread) instead of pear chunks. Big hit at work and at home.

I used this recipe as a jumping off point for a canned pear cake. My changes: Canned pears instead of fresh, added fresh grated ginger to cake batter and added a bit less butter, some pear juice and about a cup of chopped pecans to the topping...Delicious served warm with either whipped or ice cream on top.
