MEXICAN LASAGNA | |
1 1/2 lbs. ground beef 1 tsp. Lawry's seasoning salt 1 pkg. Lawry's taco seasoning mix 1 c. (8 oz.) diced canned tomatoes - use whole tomatoes, then dice 2 cans (8 oz. each) tomato sauce 1 can (4 oz.) chopped green chilies 1/2 lb. ricotta cheese 2 eggs 9 corn tortillas 10 oz. Monterey Jack cheese, grated Brown ground beef until crumbly. Drain fat. Add seasoned salt, taco seasoning mix, tomatoes, tomato sauce, and chilies. Simmer, uncovered, for 10 minutes. combine Ricotta and eggs. In bottom of 13x9x2 inch baking dish, spread 1/3 of meat mixture. Top with 3 tortillas, halved, overlapping, if necessary. Spread with 1/3 cup cheese, then 1/3 of remaining sauce. Top with 1/3 cup of Monterey Jack cheese. Repeat layers two more times, beginning with tortilla and ending with cheese. Bake in 350 degree oven for 20 minutes. Let stand 10 minutes before cutting into squares. Makes 8 servings. |
